This is what I do for my love when we have a morning together. Recipe is mine, but the idea came from Belonika (Nika Belotserkovskaja): Genia loves her blog, and I occasionally read her posts too.

Boys, look how I did it:
Egg on Feta & Tomatoes from Alex Koloskov
Bowl with few drops of olive oil inside, spread all over the bottom:

Cut large sweet tomatoes into big chunks like this:

Spread feta all around inside the bowl and leave room in the middle

Get eggs ready! Brown is better, because white eggs do not brown enough.

One egg will go inside the bowl, the rest will go back to the fridge.

Cover feta all around the egg with chunks of tomato.

No salt, but add some seasoning (italian preferable).

Cover the whole thing with cheese. The best is to use Italian cheese mix, but anything else well work too. I had mexican mix here:

The last layer of cheese should be some fine Parmesan Then to the oven to conventional (bake will work too) mode, 475°F for … you need to find the time for your particular setup yourself:-) Mine was 15 minutes.
The idea is to have egg yolk to be liquid. For me it was 15 minutes in our little oven:

Serve with toasted bagel and coffee.

If you use egg’s whites instead of the whole egg, it will go like this, creating almost soufflé-like thing. Less calories (no yolks), I like it this way better But my woman prefers the whole eggs, and I like this too:-)

Hi Alex, What is this Mexican & Italian Cheese, is it a blend of grated cheese from supermarket? In Australia I have not seen this before. Also how long did you find it too to cook in oven at what temperature. It looks yummy.
@Linda Mandy, yes, a regular cheese blend from supermarket. i like Italian 6 cheese blend Costco sells, but any of these will work too:
